Metabolic Sandwich Bread

Ingredients

5 eggs, organic and pasture-raised

6 tablespoons egg whites, organic and pasture-raised

2 tablespoons olive oil, coconut oil, or avocado oil

1/2 cup dairy-free yogurt, unsweetened and unflavored

2 cups almond flour

2 teaspoons baking powder

1/2 teaspoon xanthan gum

1/2 teaspoon sea salt

Instructions

Preheat your oven to 350F and line a loaf pan with parchment paper and set aside.

Make sure all ingredients at room temp and in a large bowl, add eggs, egg whites, olive oil, and dairy-free yogurt. Whisk to combine.

Slowly add all of the remaining ingredients and mix to form a smooth batter. Pour the batter into the lined loaf man and smooth over the top with a spatula.

Bake for 45 minutes or until the top of the loaf is crusty.

Let cool completely before slicing into 12 slices and serving. We recommend topping your bread with some smashed avocado, or for a sweeter option, a dollop of our homemade low-carb jam.
