These homemade pizza rolls are just as delicious as the store-bought ones… fluffy pockets of dough packed full of cheesy goodness. The difference? Ours are grain-free, dairy-free, and metabolic! You are going to fall in love with this fun dinner recipe.

Pizza Rolls

Ingredients:

  • 1/2 cup almond flour
  • 1/2 cup coconut flour
  • 5 tablespoons psyllium husk
  • 1 tablespoon baking powder
  • 1/2 teaspoon sea salt
  • 1 teaspoon oregano
  • 8 large egg whites (plus 1 more for egg wash)
  • 3 tablespoon melted butter or avocado oil
  • 2 tablespoons apple cider vinegar
  • 3/4 cup hot water
  • 3 tablespoons tomato paste
  • 3 ounces turkey pepperoni (nitrate and junk-free), chopped in half
  • 4 ounces dairy-free shredded cheese, or organic cheese

Instructions:

Preheat the oven to 350F and line a baking tray with parchment paper or a silicone liner.

In a large bowl, add almond flour, coconut flour, psyllium husk, baking powder, sea salt, and oregano. Mix to combine.

Add egg whites, melted butter, and apple cider vinegar and stir to combine.

Slowly add hot water and mix again with a spatula. The dough will thicken!

Place the dough on top of a silicone liner and roll it out using a rolling pin, using parchment paper on top to prevent sticking. Create an even rectangle (you may have to trim off the edges)

On one half of the dough, place your fillings. Start by dropping very small spoonfuls (1/2 teaspoon) of the tomato sauce into little mounds, leaving a gap between each mound of sauce. Top each mound with pepperoni and cheese.

Gently fold the dough over the top of the toppings and seal the ends using your fingers. Using a sharp knife, cut each pizza roll apart from the other.

Transfer the pizza rolls to the baking sheet, pinching the seams of the pizza roll to ensure it doesn’t explode when cooking. Brush each pizza roll with egg whites.

Bake pizza rolls for 30 minutes or until golden brown and piping hot. Remove from the oven, and serve!
