This rich, luscious quiche is a perfect breakfast or brunch dish. You’ll get a protein punch from the ham and eggs, plenty of healthy fats, and nutrient-rich leeks. And since it’s crustless, you don’t have to save it for a special occasion — you can enjoy it whenever you like!

Ingredients:

  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 leek, sliced
  • 6 ounces smoked gouda cheese, or dairy-free cheese
  • 2 tablespoons grass-fed butter or avocado oil
  • 1/2 teaspoon mustard powder
  • 12 pasture-raised eggs
  • 1/2 cup unsweetened almond milk
  • 1/4 pound baked ham, diced

Instructions:

1) Preheat the oven to 375F.

2) In a large skillet, melt butter or oil over medium heat. Add sliced leeks and sauté until softened, about 5 minutes. Add ham and turn heat to low. Sauté for 2 more minutes. Remove from heat and set aside.

3) Add eggs, milk, salt, pepper, and mustard powder to a large bowl. Whisk to combine.

4) Add ham and leek mixture to a 9-inch pie dish and pour egg mixture on top. Top with either gouda cheese or dairy-free equivalent. Bake for 40 minutes or until set. Serve immediately.
