These aren’t your standard snack bars loaded with gluten-filled flour or oats, milk chocolate, and truckloads of sugar- whether that’s corn syrup or even maple syrup… these soft and chewy granola bars are low-carb and packed with only the good stuff. These bars are made primarily from nuts and seeds which are rich in healthy fats and vitamins.

Easy Metabolic Granola Bars

Makes: 12 Granola Bars

Cook Time: 20 min.

Total Time: 30 min.

Ingredients:

  • 1 egg, organic and pasture-raised
  • 4 tablespoons monk fruit sweetener (or sweetener of choice)
  • 2 tablespoons almond butter
  • 1 tablespoon coconut oil
  • 1 cup flaked almonds
  • 1 cup walnut pieces
  • 1 cup unsweetened coconut flakes
  • pinch of sea salt
  • 1/3 cup dark chocolate chips, or stevia-sweetened chocolate

Instructions:

Preheat the oven to 350F and line an 8×8 baking tray with unbleached parchment paper.

In a large bowl, whisk together the egg and sweetener until pale in color.

In a small cup, melt the almond butter and coconut oil together and stir to combine. Add this to the egg mixture and stir to combine.

Add the almonds, walnuts, coconut, and sea salt to the bowl and stir to combine. Add chocolate chips.

Pour the mixture into the pan and press down firmly to pack the mixture together as tightly as possible.

Bake for 20-25 minutes or until turning golden brown on the top. Take out of the oven and let cool completely before slicing and serving.
