- 1 large eggplant, sliced
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 onion, sliced
- 2 heirloom tomatoes, halved
- 1 red bell pepper, sliced
- 2 tablespoons avocado oil
- 1 tablespoon himalayan sea salt
- 1 tablespoon ground black pepper
Preheat the grill to medium heat (approx. 400F).
Drizzle the vegetables in avocado oil, salt, and pepper. Grill the vegetables with the lid closed until lightly charred and fork-tender, approx 7-8 minutes.
