Protein Piccata Sheet Pan
Serves: 4 Prep Time: 10 minutes Cook Time: 40 minutes Total Time: 50 minutes
1 head cauliflower, cut into florets 3 lbs. bone-in, skin-on chicken thighs and drumsticks 2 tbsp olive oil 1 ½ tsp Himalayan sea salt 1 tsp black pepper 1 tsp smoked paprika 2 tsp turmeric 2 tbsp fresh ginger, minced 2 lemons, sliced into rounds ½ cup chicken broth 1 bunch asparagus, woody ends removed 4 cloves garlic, minced 2 tbsp capers, drained 4 tbsp fresh parsley leaves, chopped
Preheat the oven to 425F.
Place chicken and chopped cauliflower florets in a 9×13 casserole dish. Drizzle olive oil over chicken and the salt, pepper, paprika, turmeric, ginger.
Nestle in your sliced lemons, pour broth over the top.
Transfer to the oven for 15 minutes.
Add asparagus to the sheet pan, along with the capers and garlic. Place back in the oven for 15 more minutes, or until chicken is cooked through.
Remove from the oven, top with fresh parsley. Serve immediately.
Any frozen or fresh vegetables that can be roasted can take place of the cauliflower or asparagus.
