Rosemary Balsamic Sheet Pan

Servings: 6
Prep Time:  10  minutes - (and 1 hr + marinating)  
Cook Time: 30 minutes 
Total Time: 40 minutes

Ingredients  

1.5 lbs chicken breast, cubed
¼ cup balsamic vinegar
1/3 cup olive oil
Juice of ½ lemon
2 cloves garlic, crushed
¼ cup fresh rosemary, chopped
15 oz. brussels sprouts, de-stemmed and halved
2 apples, cored and peeled, diced
6 slices of bacon, chopped
Salt and pepper to taste

Instructions  

In a blender, add balsamic vinegar, oil, lemon, garlic and fresh rosemary and blend until smooth.

In a large bowl, add balsamic mixture and chicken pieces. Let marinate for an hour (or overnight).

Preheat the oven to 375F and line a baking sheet with parchment paper. Add brussels sprouts, apple, bacon, and marinated chicken to the pan. Pour over balsamic sauce.

Bake for 30 minutes or until everything is crispy. Remove and serve.
