Ingredients

  • 1 tomato, diced
  • 1/2 teaspoon black pepper
  • 1 clove garlic, minced
  • 2 tablespoons avocado oil, or olive oil
  • 12 eggs
  • 1 sweet potato, peeled and thinly sliced into rounds
  • 1 cup spinach, chopped
  • 1 teaspoon sea salt
  • 1 lb. ground turkey
  • 1/2 teaspoon chili powder

Instructions

1) Preheat the oven to 375F. Lightly grease a casserole dish with one tablespoon of avocado or olive oil. Set aside.

2) In a large skillet, heat one tablespoon oil over medium heat. Add ground turkey, chili powder, garlic, salt, and pepper. Sauté until the meat begins to brown, around 5-7 minutes.

3) Line the bottom of the casserole dish with sweet potato rounds, forming a base.

4) Place the cooked turkey over the sweet potato rounds.

5) In a bowl, beat eggs, salt, and pepper, until eggs are frothy. Stir in spinach and tomato.

6) Pour egg mixture over the ground turkey and bake the casserole in the oven for 30-40 minutes, or until eggs are set.
