These tender and juicy lamb ribs flavored with fresh rosemary and applesauce make for a hassle-free, yet decadent dinner. Pair with cauliflower mash, or roasted seasonal vegetables.

  • 2 racks of pasture-raised lamb, frenched
  • 2 tablespoons fresh rosemary
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons avocado oil
  • 2 tablespoons apple cider vinegar
  • 1/2 cup organic applesauce, unsweetened


Preheat the oven to 375F and place the lamb on a baking sheet.

Season the lamb with rosemary, salt, pepper, and mustard.

Place a skillet over medium heat. Add 1 tablespoon avocado oil and when hot and sizzling, sear the lamb on each side for 3 minutes or until browned. Return the lamb to the baking sheet.

In a small bowl, add 1 tablespoon avocado oil, apple cider vinegar, and apple butter. Mix to combine. Spread over the lamb racks and place everything in the oven for 25 minutes.

Serve immediately alongside your metabolic side of choice.
