Ingredients:

  • 1 teaspoon red pepper flakes
  • 1 inch fresh ginger, chopped
  • 1/4 cup and 2 tablespoons coconut aminos
  • 2 lbs. chicken drumsticks, bone-in and skin-on
  • 2 red onions, sliced
  • 1 lemon, sliced into rings and zested
  • 2 tablespoons grass-fed butter, divided
  • 2 tablespoons raw honey
  • 3 cloves garlic, minced
  • 6 cups spinach

Instructions

In a large bowl, add red pepper flakes, ginger, and coconut aminos. Stir to combine. Add chicken drumsticks and stir to ensure the chicken is coated. Place in the fridge overnight to marinate.

Preheat the oven to 400F.

Place the marinated chicken on a baking tray and nestle the red onions and lemon around the chicken. Bake in the oven for 40 minutes, basting occasionally.

In a small saucepan, add 1 tablespoon of butter, honey, and lemon zest. Heat over low heat, stirring continuously. When incorporated, pour sauce over the chicken and return to the oven for 10 minutes.

Meanwhile, prepare the greens. Add remaining butter, garlic, and spinach to a skillet and saute for 3 minutes or until spinach has wilted.

Serve greens and top with cooked chicken, onion, and lemon slices. Pour sauce over the top.
