A fun twist on classic Mexican flavors. You’ll NEVER expect the mild zucchini taste to compliment the spicy jalapenos and cilantro-limeturkey so well. You might be surprised how little you miss the tortilla! Plus, zucchinis in particular are great for boosting your immune system (and eye sight) thanks to it’s ample amounts of Vitamin A. And Cilantro is rich in immune-boosting antioxidants which prevent cellular damage caused by free radicals. These Cilantro Lime Stuffed Zucchini Boats are ready in 35 minutes!

Cilantro Lime Stuffed Zucchini Boats

Ingredients  

Zucchini 
4 zucchinis 
1 tablespoon olive oil 
¼ teaspoon salt  

Filling 
2 tablespoons avocado or olive oil 
1lb ground turkey, or ground beef 
1/3 cup cilantro, finely chopped 
½ sweet onion, finely chopped 
2 garlic cloves, minced 
½ teaspoon salt 
½ teaspoon freshly ground black pepper 
1 jalapeno, seeded and chopped 
1 15-ounce can diced tomatoes 
1 lime, zested and juiced 
 
Toppings 
Optional: ¼ cup goats cheese, crumbled 
1 jalapeno, seeded and chopped 
¼ cup cilantro, chopped 

Instructions  

Preheat oven to 375°F and line a baking tray with parchment paper. 

Cut the zucchinis in half lengthways, scoop out insides and leave a ½-inch thick shell of zucchini. Brush the 1 tablespoon olive oil over the insides of the zucchini halves and sprinkle with salt. Place zucchini halves face-down on the tray and bake for 15 minutes until zucchinis have softened. 

Remove zucchini from the oven. Place the zucchinis on a layer of paper towels to remove any residual moisture. Once drained, transfer them to a platter, cut side up. 

Warm a large skillet over medium heat and add the oil, ground turkey or beef, cilantro, onions, jalapeño, garlic, salt, and pepper. Cook for 7 minutes until the meat starts to brown and the onions start to soften.  

Add the diced tomatoes, lime zest and juice. Cook uncovered until a light sauce forms and the turkey is cooked through (approximately 6 minutes). 

Fill each zucchini with the cilantro lime meat mixture. Distribute the goat cheese over the zucchini. Garnish with additional jalapeño (if using) and cilantro sprigs. Serve immediately.
