Ingredients:

  • 4 cups almond flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • pinch of sea salt
  • 2 organic oranges
  • 6 pasture-raised eggs
  • 1/2 cup raw honey
  • 1/4 cup coconut oil or grass-fed butter, melted
  • 1 teaspoon vanilla extract

Instructions:

Preheat the oven to 325F and line a muffin tin with silicone or unbleached liners.

In a large bowl, add almond flour, baking soda, baking powder, and salt. Stir to combine.

Zest oranges and lemons and add the zest to the bowl. Stir and set aside.

In a separate bowl, add eggs and whisk. Add the juice of one orange, raw honey, oil or butter, and vanilla extract. Whisk.

Add the wet ingredients to the dry and stir until no lumps remain.

Fill the cupcake liners with batter and bake for 25 minutes or until a toothpick comes out clean.

Let cool and serve.
