Made with grass-fed beef, organic vegetables, diced tomatoes, and an array of spices, this comforting dish is both indulgent and healthy. It is packed with protein, healthy fats, and nutrients, and really hits the comfort food cravings that you experience as the weather starts to cool down. Oh, and did I mention it has BACON?! Ingredients:

  • 8 rashers bacon, diced
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 2 ancho chiles, seeds removed
  • 4 garlic cloves, minced
  • 1 teaspoon chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon oregano
  • 1 teaspoon black pepper
  • 1/2 teaspoon sea salt
  • 2 lbs. ground beef, grass-fed
  • 1 can chopped tomatoes
  • 2 tablespoons tomato paste
  • 1 cup beef bone broth
  • optional: 1 square dark chocolate (100% dark is best)

Instructions:

In a large Dutch oven or saucepan over medium heat, add diced bacon and saute until crisp, approx. 5-7 minutes. Transfer bacon to a large paper towel and set aside.

Drain some of the bacon fat, if necessary, and add diced onion, bell pepper, chiles, and garlic. Saute for 3-5 minutes or until vegetables have slightly softened.

Add chili powder, cumin, paprika, oregano, black pepper, and sea salt to the pot and stir to combine.

Increase the heat to medium-high heat and add the ground beef. Cook until lightly browned all over, approx. 5 minutes.

Add chopped tomatoes, tomato paste, beef bone broth, and cooked bacon to the pot. Stir to combine. You can also add water here, depending on your preference. Bring everything to a boil, then reduce to a simmer, over low heat, for 30 minutes.

Add square of dark chocolate, and additional seasoning, if desired. Stir to combine, ensuring the chocolate has melted. Remove the pot from the heat and let it sit, with the lid on, for 10 minutes to allow the flavors to infuse.

Serve chili with cauliflower rice, or as is! Optional toppings include grass-fed or dairy-free cheese, sliced green onion, sliced avocado, or fresh cilantro.
