Mmm… crisp organic apples dipped in ooey-gooey caramel and rolled in chopped pecans. Today we are making a nostalgic childhood dessert, caramel apples! These festive apples are incredibly easy to make and make a delicious healthy take on a favorite fall treat. Unlike the regular candies that contain high-fructose corn syrup, wax substances, and even food coloring, these are lactose-free, refined sugar-free, and paleo-approved.

Homemade Caramel Apples

Ingredients:

  • 6 green apples, washed and dried
  • 1/4 cup Ghee
  • 1/4 cup Lakanto monk fruit sweetener (or sweetener of choice)
  • 1/2 cup full-fat coconut milk
  • Pinch sea salt
  • 1/4 teaspoon xanthan gum
  • 1 cup topping of your choice: chopped pecans, walnuts, peanuts, chocolate chips.
  • 6 lollipop sticks

Instructions:

Dip the apples into boiling hot water and then dry to remove the wax.

Stick lollipop sticks or large picks into each apple.

In a medium saucepan over medium heat, combine ghee and sweetener. Bring to a boil and cook for 3 to 5 minutes.

Remove from the heat and add coconut milk. Stir to combine.

Sprinkle xanthan gum and salt into the saucepan and whisk. Return to the stove and boil for one minute, then remove.

Coat apples in caramel mixture by dunking and swirling. Then roll them in the chopped nut mixture and place on a baking tray lined with a silicone liner.

Let cool in the fridge and enjoy.
