- 1 can full-fat coconut milk
- 1 lb. fresh organic strawberries
- 1/2 cup pure maple syrup, or sugar-free maple syrup for keto option
- 1 teaspoon vanilla extract
Blend everything in a blender until smooth and creamy.
Pour into a glass container and put in the freezer to firm. I recommend stirring every 30 minutes to prevent ice build-up.
When cold, enjoy it immediately!
