These Sweet Potato Toasts are perfect in the morning. Besides, they contain only healthy, natural ingredients. This Pumpkin and Apple Sweet Potato is like taking little bites of fall.

Ingredients

  • 1 small sweet potato
  • 1/4 honey crisp apple, sliced
  • 1/2 cup pepitas, roasted and salted
  • 1 tablespoon pumpkin butter

Instructions

For Sweet Potato Toasts:

1) Preheat oven to 350 degrees. Line a sheet tray with a cooling rack and set aside.

2) Slice a large sweet potato into 1/4 -inch slices. You should be able to get 6-7 slices, depending on the size of your sweet potato. Place sweet potato slices on a rack and spray each side of the slices with olive oil spray. Bake for 10 minutes, flip, then bake for an additional 9-11 minutes, until sweet potatoes have started to soften, but not overcooked.

3) Remove sheet tray from oven and allow sweet potato slices to cool completely on rack. Place sweet potato toasts in an airtight container in the refrigerator until ready to use.

For Pumpkin Butter, Apple, and Pepita Sweet Potato Toast:

1) Remove 1 sweet potato slice from airtight container and place it in the toaster under the “Bread” setting (if applicable) and medium darkness until golden brown and slightly softened.

2) Once sweet potato toast is reheated, spread pumpkin butter on toast. Top with apple slices and pepitas and enjoy immediately.
