Veggie-Packed Chili with Avocado Crema

Ingredients  

2 tablespoons olive or avocado oil
1 cup Yellow Onion (medium dice)
2 lbs. Ground Beef
1/2 teaspoon Salt (divided)
1 1/2 cups red bell pepper (medium dice)
3 cloves garlic, minced
1 Jalapeno pepper (seeds removed and chopped)
2 tablespoons chili powder (alter to fit spice preference)
1 teaspoon Cumin, Ground
1 teaspoon Oregano, Dried
1/2 teaspoon Cinnamon
28 ounces Tomatoes, Crushed
1 cup Water (plus 1 tablespoon for sauce)
1 Avocado (chopped)
1/4 cup Cilantro (chopped)
1 tablespoon Lime juice
Additional salt and black pepper, to taste
Optional toppings: shredded cheese, additional cilantro

Instructions  

In a 6-quart pot, heat the oil over medium heat. Add the onions, ground beef, and a 1/4 teaspoon of salt. Sauté for 5 minutes, or until onion is soft and beef is starting to brown.

Add the bell pepper sauté until just tender. Add the garlic and jalapeño pepper and sauté for 30 seconds.

Stir in chili powder to taste, cumin, oregano, and cinnamon, mixing thoroughly to coat onions and peppers.

Stir in the tomatoes, pinch of salt, and 1 cup water, cover and bring to a boil, lower heat and simmer for 20 minutes.

Meanwhile, make the avocado cream by placing the avocado, cilantro, 1 tablespoon of water, lime juice and remaining 1/4 teaspoon of salt in a blender and processing until smooth. Set aside.

Serve in individual bowls garnished with a dollop of Avocado Cream. Top with shredded cheese and additional cilantro if desired.

Staple Subs

Any ground meat can be subbed for ground beef. You may sub the individual spices for an organic chili pre-packaged spice mix to save time and resources.
