Ingredients

For the crust:
  • 1 cup almond flour
  • 1 3/4 cups tapioca flour
  • 2 teaspoons instant yeast
  • 1/2 teaspoon sea salt
  • 1/3 cup warm water
  • 3 tablespoons olive oil
  • 1 tablespoon raw honey
  • 1 egg, room temperature
For the toppings:
  • 2 tablespoons avocado oil
  • 1 cup cubed butternut squash
  • 1 tablespoon raw honey
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cinnamon
  • 4 slices thick-cut bacon, chopped
  • 1 sweet onion, sliced
  • 1 small apple thinly sliced
  • salt and pepper to taste
  • 6 ounces sharp cheddar cheese, or dairy-free cheese, shredded
  • 1/3 cup fresh sage

Instructions

Start by making the pizza dough. Add almond flour, tapioca, yeast, and salt in a food mixer. Whisk to combine. Add the water, olive oil, honey, and egg, and mix until a sticky dough forms. 

Knead the dough using your hands into a large ball and cover in plastic wrap. Set in a bowl in a warm location for 45 minutes or until the dough has risen to just over double the original size. 

While the dough is rising, preheat your oven to 375°F. In a large bowl, add butternut squash, avocado oil, honey, chili powder, and cinnamon, and toss to combine. Pour out onto a baking tray and place in the oven for 20-30 minutes. 

Add chopped bacon and onion in a large skillet and cook until bacon is crisp and onion has browned- approx. 5-10 minutes. Set aside along with the other toppings.

When the dough has risen, roll out the dough to form a 12-inch crust. Using a fork, make small indentations across the center of the dough and brush the entire crust with a little olive oil. Place the crust on a pizza stone and place in the hot oven for 10 minutes or until the pizza dough has just set. 

Remove the dough from the oven and add your cooked butternut squash, bacon, onion, sliced apple, salt, pepper, cheese, and sage. Return to the oven for about 5 minutes more. Switch the oven to broil and broil for 1-2 minutes.

Serve immediately.
