Ingredients:

  • 1 1/2 lbs. organic, grass-finished lean ground beef
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 2 teaspoons chili powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 yellow onion, diced
  • 1 tablespoon avocado oil
  • 1 packet frozen cauliflower rice
  • 1 bunch cilantro
  • 2 fresh limes
  • 1 pint cherry tomatoes, halved
  • 1 avocado, diced

Instructions

  1. Preheat a skillet over medium-high heat. When hot, add the ground beef, garlic, cumin, oregano, chili powder, salt, and pepper, and cook until browned, for around 5 minutes. Set aside and keep warm.
  2. Add a tablespoon of avocado oil to the skillet and add the diced onion. Saute for 5 minutes or until starting to brown. Add frozen cauliflower and more salt and pepper, if desired, to the skillet. Cook for an additional 10 minutes.
  3. Add cilantro to the rice and stir to combine.
  4. To each bowl, add cilantro cauliflower rice, cooked ground beef, cherry tomatoes, lime wedges, and avocado. Serve immediately.
