It’s a healthier rendition of the traditional Belgian waffle, meaning that these waffles are perfectly crisp and golden on the outside while being light and fluffy on the inside!

Grain-Free Belgian Waffles

Ingredients

8 eggs

1/2 cup coconut milk, canned, full-fat

1/4 cup grass-fed butter, or coconut oil

1/2 teaspoon vanilla extract (omit for savory waffles)

1/2 cup coconut flour

2 tablespoons monk fruit sweetener

1/4 teaspoon baking soda

1/4 teaspoon Himalayan sea salt

Instructions:

In a large bowl, whisk the eggs until frothy.

Add coconut milk, butter or coconut oil, and vanilla and whisk until smooth.

Add coconut flour, sweetener, baking soda, and salt to the mixture and whisk until smooth and thick.

Set bowl aside to rest for 15 minutes (this helps the coconut flour absorb some of the liquid).

Heat up your waffle maker and make the waffles according to the manufacturer’s directions.

Top your waffles with fresh fruit, coconut whipped cream, your favorite savory toppings, or whatever you fancy!
