Easy Homemade Strawberry Jam

Ingredients:

  • 2 cups strawberries, diced
  • 1 teaspoon lemon juice
  • 2 tablespoons water
  • 1 tablespoon chia seeds
  • 2 tablespoons powdered Swerve sweetener (or sweetener of choice)

Instructions:

Place the strawberries in a medium saucepan with the lemon juice and stir.

Bring to the boil, with the lid on, then turn the heat down to medium and let it bubble calmly for 15 minutes, stirring occasionally.

Remove the jam from the heat and mash the strawberries with a potato masher (or with a fork), then add the water and continue to cook on low heat for another 30 minutes, until the jam has reduced by half.

Remove the jam from the heat. Add the chia seeds and sweetener. Stir to combine.

Let the jam cool and transfer into a mason jar. Secure with a lid and store in the fridge.
