Huevos Rancheros

Ingredients  

Base
1 tablespoon olive oil, or avocado oil
3 cups cauliflower florets, chopped into small pieces
2 links chorizo, thinly sliced
2 cloves garlic, finely chopped
¼ cup chopped cilantro
½ teaspoon ground chili 
½ teaspoon salt
¼ teaspoon ground cumin
¼ teaspoon black pepper
2 eggs
 
Topping
1 avocado, thinly sliced
½ shallot, chopped
1 jalapeño, thinly sliced
¼ cup organic tomato salsa

Instructions  

Place one tablespoon oil or butter in a large skillet over medium heat. Add chopped cauliflower, sausage, garlic, cilantro, salt, cumin, and pepper. Cook covered for 10-12 minutes, stirring occasionally until sausage is cooked through and cauliflower is tender.

In a separate skillet, add the remaining tablespoon oil or butter and place over medium heat. Crack the eggs into the skillet and cook for 5 minutes, or until whites are cooked through but yolks are still tender.

Divide the cauliflower and sausage mixture between two plates, top with eggs, avocado, shallot, jalapeno, and salsa. Serve immediately.

Can sub fresh cauliflower for frozen cruciferous vegetable of choice. Toppings can be whatever you have available!
