Ingredients:

  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cinnamon
  • 2 tablespoons avocado oil, or cooking oil of choice
  • 4 slices sugar-free bacon, chopped
  • 1 tablespoon maple syrup
  • 1/4 teaspoon paprika
  • 2 eggs
  • 1/8 teaspoon red chili flakes
  • 2 medium sweet potatoes, diced
  • 4 cups spinach
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon garlic powder

Instructions:

1) Add oil to a skillet over medium heat. When hot, add the sweet potato and chopped bacon. Saute for 8-10 minutes, or until bacon is crisp and sweet potato is soft.

2) Add maple syrup, paprika, cinnamon, garlic powder, salt, and pepper.

3) Add spinach and saute for 3 minutes until wilted.

4) Create two wells in the hash and crack in the eggs. Cook until the desired doneness.

5) Remove the skillet from the heat and split the hash between plates. Top with red pepper flakes for a little extra heat.
